A few weeks ago, Cohl, his dad, and buddy Hunter went on a guys’ trip to the Pecos River.

It was projected to be 100+ degrees every day for their 3-day trip.

Not wanting them to concentrate too much on preparing food in the heat, I pre-packaged numerous black bean and sweet potato tacos for them and made a humongous batch of this maple pecan apple cinnamon granola.

One of my favorite things about the Fall season is the urge I get to start baking.

Even in a well-ventilated house with a brand new A/C unit, I have a hard time getting excited about cranking on the oven in the dead of summer.

However, once the cool breeze starts to kick in, I can’t help but buy up every single pumpkin-scented candle at Bath & Body Works and begin to find myself wanting to bake apple, cinnamon, and pumpkin-flavored everything.

Maple Pecan Apple Cinnamon Granola

Ingredients 

  • c. olive oil
  • c. almond butter smooth
  • c. pure maple syrup
  • 3 Tbsp. brown sugar or coconut sugar
  • 3 c. rolled old-fashioned oats gluten-free
  • 1 tsp. cinnamon
  • 1 tsp. vanilla
  • 1 c. dried apples cut into bite-sized pieces
  • 1 c. coconut large flakes
  • 1 c. pecans raw, pieces
  • 1 c. dried cranberries

Instructions 

  • Preheat oven to 350 degrees.
  • In a medium-sized pot over medium-low heat combine olive oil, almond butter, pure maple syrup, and sugar.
  • Cook for 3-4 minutes, stirring occasionally, or until mixture becomes smooth.
  • Combine oats, cinnamon, dried apples, coconut flakes, and pecans in a large bowl. Toss until well mixed.
  • Pour maple sauce over the oats mixture and stir until everything is evenly coated.
  • Line a baking sheet with parchment paper and spread oats out evenly.
  • Bake in preheated oven for 23-25 minutes. (Do not flip while baking if you want clusters of granola!)
  • Remove from oven and let sit for 10 minutes before stirring.
  • Add cranberries, mix until combined, and enjoy!
