Yup!  You can either meal prep this dish ahead of time for the week or quickly throw it together on a busy weeknight.

As you can see in the recipe below, there are only a few simple ingredients that you will need for this recipe.

And chances are, you probably already have all of them on hand!

Chicken – Chicken breasts are cut into 1-inch cubes in this dish to make them cook up quickly.  Feel free to substitute with chicken thighs if that’s what you have on hand.

Sweet Potatoes – Peeled and cubed sweet potatoes give a large majority of the sweet flavor to this meal.  You can try substituting them for regular russet or Idaho potatoes, but just know the flavor of the dish will be largely affected.

Broccoli – Added towards the end of cooking, broccoli gets steamed until bright green and perfectly crisp!  Make sure not to add the broccoli too soon as it will become mushy and overcooked.

BBQ sauce – Depending on your taste preference you can choose to use an original BBQ sauce, a more smokey, a more spicy, or even a slightly sweet variety.  Since barbecue sauce adds a massive amount of the flavor to this dish, you’ll want to choose one that you really like on its own!

Honey – Just a bit of honey is mixed into the sauce to add a touch of sweetness.  If you don’t have honey, you can also always use white sugar, brown sugar, agave nectar, or pure maple syrup instead.

Garlic – Fresh garlic cloves are crushed and mixed into the sauce.  If you don’t have garlic cloves, you can also substitute with 1/2 teaspoon of garlic powder.

Prepping

A key thing to note when you’re preparing the ingredients for this dish is the importance of the size that you cut them.

Since all of the food will be cooked together in ONE pot, you’ll want to make sure they’re the correct size.

For the sweet potatoes, make sure they are no large than 1/2-inch cubes.  If they are, they will take quite a bit longer to fully cook through.

The chicken needs to be cut no larger than 1-inch cubes.

Lastly, the broccoli will need to be cut into bite-sized pieces.

How to Make

It’s pretty quick and easy to make this 30-minute one-pot chicken and sweet potatoes recipe.

These are the step-by-step instructions you’ll want to follow:

  1. Whisk together BBQ sauce, honey, salt and pepper in a small bowl.
  2. Combine BBQ mixture and cubed chicken in a 1-gallon sized ziptop bag.

  4. Add olive oil, potatoes, salt and pepper to a large skillet over medium heat.
  5. Saute potatoes for 8-10 minutes, or until they are almost cooked through.
  6. Push sweet potatoes to the side of the skillet and add oil and cloves.  Saute for 1 minute.
  7. Add marinated chicken and sauce to the skillet.  Cook over medium heat for 5 minutes, stirring occasionally.
  8. Place broccoli on top of the chicken and sweet potatoes.
  9. Cover with a lid and reduce heat to low.  Cook for 7-10 minutes or until broccoli is bright green and cooked through.

Ingredients 

  • 1 lb. chicken breasts cut into 1-inch cubes
  • cup BBQ sauce
  • 1 Tbsp. honey
  • 1 ¼ tsp. salt divided
  • ½ tsp. pepper divided
  • 4 Tbsp. olive oil divided
  • 3 cups sweet potatoes peeled, cut into ½-inch cubes
  • 2 cloves garlic crushed
  • 1 head broccoli cut into bite-sized pieces
  • Cilantro optional
  • Green onions optional

Instructions 

  • Marinate the chicken: Whisk together BBQ sauce, honey, ½ teaspoon salt and ¼ teaspoon pepper in a small bowl. Pour BBQ sauce mixture over cubed chicken in a gallon-sized zip-top bag. Marinate for at least 10-15 minutes or up to overnight

  • Saute the potatoes: In a large skillet or pot over medium heat add 3 tablespoons olive oil, sweet potatoes, ½ teaspoon salt and ¼ teaspoon pepper. Saute for 8-10 minutes, stirring occasionally, until sweet potatoes are almost cooked through.
    4 Tbsp. olive oil, 3 cups sweet potatoes
  • Add the garlic and chicken: Push sweet potatoes to the side of the skillet. Add last tablespoon of olive oil and garlic cloves. Saute for 1 minute over medium heat. Add marinated chicken and sauce to the skillet. Cook over medium heat for 5 minutes, stirring occasionally.

  • Add the broccoli: Lastly, add broccoli on top of the chicken and sweet potatoes. Sprinkle with remaining ¼ teaspoon salt. Cover with a lid and reduce heat to Low. Simmer for 7-10 minutes, or until broccoli is cooked through.
