Recently we had a very good friend of ours become ill with pneumonia for an extended period of time.  Wanting to make her and her family’s life just a little easier for a night, Cohl and I brought over this easy taco lasagna to them.

Not only does this Mexican lasagna recipe make enough food for ten generous portions, but it is also full of flavor and a good bit of nutrition!

One of My Fave Ground Turkey Recipes

When Cohl brought up the idea of bringing food to our friends, my mind immediately started racing.

It was a pretty busy weekend and I knew I would not have too much time to spend in the kitchen.  I went looking in the archives to see what I could find.

This ground turkey Mexican lasagna recipe immediately stood out to me.  It is full of lean protein, good-for-you veggies, and is one of the best ground turkey recipes on the site.

How Do You Make Taco Lasagna?

This taco lasagna recipe is a really easy casserole recipe to make when you want to whip up a ground turkey recipe.  This ground turkey Mexican lasagna recipe has been on the site for a few years, but has recently been updated!

Once you have whipped up your ground turkey taco mixture, you will follow the process below to layer up your taco lasagna recipe:

  • Ground turkey, taco seasoning, and salsa mixture.
  • Corn tortillas (a MUST to make this the best Mexican lasagna!)

Cook’s Tip: Do not use flour tortillas.  They will come out mushy!

  • Whole kernel corn, canned.
  • Black beans, rinsed and drained.
  • Cheddar cheese (Monterrey Jack cheese blend or dairy-free cheese works great too!)
  • And repeat!

Can I Make Changes to this Mexican Taco Lasagna Recipe?

  • Decrease the spice level: leave out the jalapeno and cayenne pepper completely.
  • Increase the spice level: increase the amount of jalapeno and cayenne pepper or use half salsa and half crushed tomatoes.
  • Get a little more flavor: dip the corn tortillas in hot coconut oil before layering them.
  • Change up the protein: use ground chicken, beef, venison or tofu.
  • Make it a little healthier: decrease the cheese by half and use 8-10 tortillas instead of 12.

  • Cilantro will give it an extra layer of flavor.
  • Green onions can add a pop of color and a bit of a bite!

Wow, I’m eating this Mexican Lasagna as I write this comment and London, it tastes absolutely amazing! I will definitely be making this again in the not-too-distant future. Anybody who’s thinking about making this Lasagna for themselves, JUST DO IT! Hands down a 5-star recipe!

    1. Yay, Justin!! I am SO happy you enjoyed the Mexican Lasagna! It’s one of my favorites and most requested by friends! Thanks so much for your kind comment and rating! 🙂

Looks delicious! Definitely trying it this weekend for my boyfriends birthday dinner. Can I switch up the soft tortillas for the crunchy tortillas? Im sure the sauces would soften it up a bit once it all sets. Or toast up the tortillas before layering them. Like a crunch wrap but lasagna style.

    1. Hi Alexandra! You absolutely can! The crunchy tortillas will definitely soften up a bit in the oven. Can’t wait to hear how it turns out! 🙂

This was wonderful! My whole family loved it. Seasoning was spot on the only think I did different is I only had the tomatoes with green chillies so I used that and left out the jalapeno, and I used dairy free cheese. Will definitely be making this again. Thanks for the recipe!

Just made this tonight but put a little twist on it. I used the ground meat to make a hamburger red chili, made some refried beans then mixed it with my chili. I left out the tomatoes until the end and put them on top the last few minutes of cooking. My kids are loving it!

    1. That sounds absolutely amazing, Allie!! I love all of your alterations. Will definitely have to try that out next time. Thanks so much for your comment and rating!

    1. Absolutely, Jessica! Feel free to substitute the beans for whatever kind is your favorite. Thanks for the question!

  5. On a scale of 1-10, how spicy is this if you leave the jalapeño and cayenne pepper in? I’m thinking of making this for a potluck ladies lunch, but I don’t want to burn their faces off lol

    1. Hi Hannah! It has a slight kick, but nothing crazy. Maybe a 2-3? You can always leave out the jalapeño without sacrificing too much flavor!

    1. Hi! There is no need to heat up the corn tortillas beforehand since they get baked in the oven! Thanks for the question 🙂

    1. Hi Emily! I have not personally tried this recipe with flour tortillas, but think it might work. My only reservation is that the flour tortillas might become “gummy” once all of the moisture from the casserole seeps into them. If you try it, please let me know how it turns out!

    1. Hi Sue! Yes! This recipe will freeze great as long as you wrap it tightly and thaw it in the refrigerator before serving. Thanks for the question!
