Mediterranean Chickpea Salad with Cucumbers

- 2 15-oz. cans chickpeas rinsed, drained
- 1 cup cherry tomatoes cut into ½-inch pieces
- 1 cup red bell pepper finely diced
- 1 cup cucumbers cut into ½-inch pieces
- ½ cup red onion finely diced
- 8 oz. Feta cheese cut into ½-inch cubes
- ¼ cup parsley finely chopped
- 1 Tbsp. lemon juice
- 3 Tbsp. olive oil
- 2 tsp. Greek seasoning
Add all ingredients to a large bowl.
Toss to completely combine.
Refrigerate for 30 minutes, or overnight, before serving.
Serve chilled with additional parsley and enjoy!
